I live in the beautiful natural surroundings of Katarínská Huta, where I use the pure organic products of our garden and the gifts of nature to cook jam using the traditional method of how our grandmothers cooked jam. Everything that grows here is grown on the principles of permaculture, purely, without any chemistry. I cook the jam in the traditional method until it thickens, without using pectin and usually without sugar. I enrich the traditional methods with our herbs and sweeten with our grape cider, pears or sweet apple varieties. I cook traditional jam -apricot, plum, apple, blackberry,… At the same time, I try to combine other types of fruit and herbs, even though using the traditional method of cooking jam. This produces an interesting flavour and enhances the medicinal effects of the fruit. This is how blackberry jam with chokeberry, elderberry with lavender, apple jam with jostaberry, apple jam with black grapes or apple cream with carob and pumpkin seeds came about.
